Today we were visiting Kokoro Tokoyo Mazesoba’s downtown Vancouver location to get a sneak preview of their new summer feature. This is a limited edition bowl and set in collaboration with Holt Renfrew. Available within their store’s cafe from August 2nd to the 22nd, 2026.
This is the Hiyashi Bowl collaboration, a chilled ramen, served cold ideal for hot summer days. With cubes of fresh sashimi fish it reminded me of a poke bowl, but with plenty of fine chewy noodles instead of rice. It is available in either regular or spicy.
This is a striking and filling bowl with sashimi, scallop, ikura, bamboo shoots, julienne cucumber, radish, micro greens, and green onion. Between the two we preferred the regular one finding the spicy too flavourful and that it over powered the gentle and clean flavours of the quality seafood. We would end up mixing our two servings together for a better balanced bite.

For drinks we found the fruit refreshers on the too sweet side, but did like the milk tea as a useful palate refresher for in between bites.
I didn’t think the only side option of truffle fries all that complimentary to such a light noodle. However, on their own they were tasty with plenty of truffle oil flavour on each thicker cut fry, and within the generous amount of creamy mayo dip. This is probably one of the most truffle-y of fries I have had a date.
For a more complimentary side we looked to the their Pan Fried Homemade Pork Potstickers with crispy skirt instead. Whenever I revisit any of their location and order this, I always forget how good they are.
