Fairmont Waterfront’s ARC Restaurant X HYPE Chocolate Collab

This summer, to help beat the hotter weather, Fairmont Waterfront’s ARC Restaurant has a new partnership with local artisan chocolatier, HYPE Chocolate. Together, they have launched an exclusive Artisanal Ice Cream Pop-Up, by the ARC Patio, in the heart of downtown Vancouver.

For those unfamiliar, in 2022 Scott Symons and Marlayna Pincott came together to bring the city, HYPE Chocolate. Known for their creative ingredients and combinations of ice cream and chocolates, HYPE is redefining the ordinary through innovative flavours and meaningful partnerships. Both of which are present in this, their most recent collaboration.

As per the press release, “HYPE Chocolate’s partnership with Fairmont Waterfront reflects a shared dedication to innovation, sustainability, and lasting community impact. Through its partnership with Cocoa Horizons, HYPE Chocolate ensures its cacao is ethically and sustainably sourced – aligning seamlessly with Fairmont Waterfront’s own eco-conscious values, proudly recognized with a certification of ‘5 Green Key Hotel’ from Green Key Global”.

The pop-up cart will be parked adjacent to ARC Restaurant’s Patio from 11AM-7PM, every weekend throughout July, August and the first two weeks of September.

The flavours and offerings mentioned below will only be available here on rotation. Our crafty cream creators have focused on flavours distinctive to Fairmont Waterfront. Most notable is the dairy-free option, a signature Lemon, Wildflower Honey & Thyme sorbet. This is an affectionate nod to the hotel’s rooftop garden and bee apiary. It is zesty and refreshing, making it a great palate refresher after dinner at Arc or an aperitif before dinner at Arc.

For chocolate lovers there is a Salted Chocolate ice cream, featuring sea salt from Vancouver Island, crowned with gold leaf. This is a tribute to Fairmont Waterfront’s pure coastal luxury ethos.

My favourite is the Vanilla Bean & Brown Butter Croissant flavour also made more decadent with edible gold topping it. The latter is definitely a nod to the hotel’s refined and elevated reputation. The flavours meld together seamlessly for a cold and creamy pastry. You can make out flakes of the croissant amongst buttery iced treat. Writing about it now, I want another. Each cup is the perfect one scoop serving size to satisfy, but still leaves you wanting more; and/or with the ability try another flavour.

The last flavour is Coffee X Prototype Espresso Bean. A clean and classic coffee ice cream featuring beans from local coffee purveyors, Prototype. They are located a few stores down from HYPE’s own store front on Hastings in the Strathcona neighbourhood. This was simplify delicious, I have no notes. Like all the others, the flavour here is so pure and clean, you can definitely make out the quality of the ingredients used, and in turn the product itself. I would buy a pint of this.

As per the press release, a rotating selection of signature flavours will be featured in the weeks ahead, so stay tuned to capture the ones you want to try.

For those wanting to serve their sweet tooth, but are looking for a healthier options, HYPE Chocolate is also offering their signature seasonal B.C. berry cups. Each topped with your choice of a warm, velvety chocolate in either milk chocolate, dark chocolate, and/or matcha white chocolate. I was surprised by how much I enjoyed this, even in comparison with the ice cream cups above.

Once again, the quality of the ingredients they use shows up in taste and texture. This had me licking the chocolate that dripped down the sides of the cup clean. Especially the velvety matcha that was more sweet white chocolate and creamy latte than bitter tea. I liked this and the drizzle of rich cocoa in the milk chocolate.

Once again this playful Popup will be available adjacent to ARC Restaurant’s Patio every weekend of summer from 11AM-7PM. Worth stopping by and grabbing a cup when in the area.
